Tuna Tomatoes Basil and Mozzarella

Serves 2 (4-6 as part of a larger meal)

1 fillet tuna – cooked and cooled (1 tin tuna is just as nice)
2 large vine tomatoes - sliced
1 mozzarella – sliced
Handful basil leaves
Suffolk Mud Vinaigrette (make first)
Sea salt
Black pepper
 
Method
 
On a large plate or platter arrange the tuna, tomatoes and mozzarella in rows.
Sprinkle the Suffolk Mud over the tuna.
Season to taste.
 
Serve with toasted crusty bread or ciabatta slices toasted.
A tasty addition to the toast is to rub them with garlic or garlic oil.
