Tuna with Homemade Tomato Sauce and Gnocchi

Serves 4-6

Olive oil
1 onion - finely chopped
1 garlic clove - finely chopped
1 carrot - cubed
400g tomatoes (fresh - cubed or tinned)
1 cup water
Small handful basil leaves - chopped
1 large piece tuna - cooked or 1 tin of tuna in oil
Aromatic salt
1 packet Gnocchi 
Fresh basil
Parmesan cheese - grated


Heat 1tbsp oil in a large saucepan and add onion, garlic, carrots and tomatoes.
Add water and basil leaves and bring to boil and simmer for about an hour. 
Add salt to taste, tuna and heat through.
Stir occasionally with a wooden spoon to stop sticking.
Cook Gnocchi according to packet directions.
Add to tomato mixture and make sure it is heated through.
Serve sprinkled with fresh basil and Parmesan cheese.
