Nectarine and Rocket Mixed Salad Leaves with Suffolk Mud

Serves 2

2 large ripe nectarines
1 lemon – 2tbsp juice
6tbsp olive oil
1 ½ tbsp. whipping cream
2tbsp fresh chives – finely chopped
Sea salt
Black pepper
150g rocket mixed salad leaves
Suffolk Mud Vinaigrette
Slice the nectarines in half and remove the seed. Finley slice and place in a glass bowl.
Add ½ tbsp. lemon juice and toss to cover.
Whisk together the remaining lemon juice and olive oil.
Whisk in the cream then the chives.
Season with salt and pepper.
Add the rocket mixed salad leaves to the bowl of nectarines.
Add the dressing and toss.
Season with more salt and pepper, to taste.
