Strawberry and Goats Cheese Flan

Serves 4-6

1 packet ready rolled puff pastry
50g Parmesan cheese - grated
1 orange pepper into strips
200g goats cheese log – into thin rounds
100g strawberry – cut in halves or quarters
Handful basil leaves
Mixed salad leaves
Balsamic vinegar or Suffolk Mud
 
Method
Pre-heat the oven to 200C (Fan).
Line a baking sheet with grease-proof paper and lay the pastry on top.
Score a shallow border around the pastry 1cm from the edge.
Scatter Parmesan over the base of the pastry and bake for 12-15mins.
Place the pepper, cheese and strawberries over the pastry base and 
bake for another 10-15mins.
 
Serve with mixed salad leaves and balsamic vinegar drizzled over.
