Bacon Cashews and Tomato Baked Peppers

Serves 2

Olive oil
2 rashers of bacon – diced
Black pepper
1 garlic clove garlic – crushed
6 small tomatoes – diced
2oz dried breadcrumbs
25g cashews – roughly chopped
Small bunch coriander - chopped
4 tsp pesto
75g couscous
2 red peppers
Mature cheese grated
Parmesan – grated
Baby spinach leaves
Pre-heat oven to 180C (Fan)
Heat fry pan on stove add oil and bacon, season with cracked black pepper.
Stir in garlic, tomatoes, breadcrumbs, coriander and pesto. Stir to combine.
Make couscous according to instructions on the packet. Set aside.
Cut peppers in half and remove the seeds. Stuff each half with mixture.  
Line an ovenproof tray with baking paper and place peppers on it.
Bake peppers in oven for 25mins or until cooked.
Grate cheeses on top and serve with baby spinach leaves.
