Potato Chorizo and Baked Egg with Rocket

Serves 2

4 tbsp mashed potato
8 slices chorizo sausage
2 eggs
Butter - softened
Sea Salt
Black Pepper
2 1/2 cup ramekins


Pre-heat oven
Rub ramekins with soft butter.
Place 2 tbsp mashed potato into the bottom of each ramekin and spread to cover.
Arrange slices of chorizo over the potato.
Break an egg on top, make sure the yoke stays whole.
Season with salt and pepper.
Bake in oven until egg is just set.

Place ramekin onto plate and scatter rocket around.
Serve with crusty bread.
