Smoked Fish and Handmade Chips

1 packet of smoked fish or your choice
2 large potatoes
Olive oil
Sea Salt 
Black pepper
Enough rocket for 2

Method

Pre-heat oven to 200C (Fan)
Heat the plates
Take the smoked fish out of the fridge and bring to room temperature.
Cut the potatoes lengthwise into chips.
Place baking paper on a tray and add the potato chips. 
Splash the chips with oil using your hands to ensure the chips are covered all over with the oil. Sprinkle with sea salt.
Put into the oven until brown about 30 mins. 
Share the chips between the plates.

Serve with smoked fish and rocket leaves.
