Potato and Chorizo Tortilla

1 brown onion – sliced
2 cloves garlic – sliced
1tbsp olive oil
225g chorizo – thinly sliced
300g small potatoes – boiled until just soft and sliced
6 eggs
75g Parmesan cheese
200ml double cream
Sea salt
Black pepper
Lemon – juice
Mixed salad leaves
 
Method
 
Pre-heat fry pan and add olive oil.
Add onion and garlic and gently fry for 5mins. Set aside.
Put chorizo into the pan and fry until crisp.
Add potatoes to pan and fry.
Next put onion and garlic back into the pan.
Beat eggs, Parmesan and cream together. Season with salt and pepper.
Add to the pan with a squeeze of lemon juice.
Cook for 15mins and then grill for 5mins or until top is set and going brown.
 
Serve with mixed salad.
