Baked Halibut (In season)

1 fillet per person (or white fish will suffice) 
1tbsp butter
Plain flour
Sea salt
Black pepper
 
Method
 
Pre-heat oven to 160C (Fan)
 
Make sure the fillets are dry.
Sprinkle with salt and pepper and dredge in flour.
Place in an earthen-ware baking dish or pie dish, 
add the butter in small pieces.
Bake gently for about an hour.
 
Serve on a hot dish with the liquid from the fish strained and pored around.
Serve with New Jersey Royal potatoes and baby spinach leaves.
 
For the Jersey Royal potatoes
Boil with a sprig of mint.
Serve by placing them in a hot serving dish with a knob of butter dotted over. 
Even better is a small amount of parsley is chopped and added to the butter.
