One-pot Beef Stew and Couscous

Serves 4-6

1tbsp olive oil
6 shallots (or 6 small onions)
1 brown onion diced
1 red onion diced
1 clove garlic – finely sliced
1tsp dark brown Muscovado sugar
1 tsp ground ginger
12 mushrooms
1 tin tomatoes
1tsp cumin
Chilli flakes to taste
1tsp Ras el Hanout
400ml white wine (or water)
1kg stewing steak
Yogurt
 
Couscous
Whole olives – cut in ¼
1 shallot or onion – diced
Vegetable stock
 
Naan bread
Red onion chutney
Cucumber – sliced
 
Method
Pre-heat oven to 150C (Fan)
Heat oil in flame proof casserole dish.
Gently fry shallots, brown and red onions.
Add garlic, sugar, ginger, chili, and spices.
Add tomatoes and breakup.
Add wine (water) and bring to boil.
Finally add steak and seasoning.
Cover and place in the pre-heated the oven
for 1 – 1 ½ hours to cook.
When cooked remove from the oven and stir in yogurt.
Adjust seasonings and ensure stew is hot.
 
Serve with couscous, Naan bread, red onion chutney and cucumber.
 
For Couscous
Make couscous according to packet directions using vegetable stock.
Heat a little oil in a fry pan and add onions and olives, cook until soft.
When the couscous is ready add the onions and olives and mix.
Set aside until stew is ready.
