Whole Rainbow Trout with Mediterranean Vegetables
2 fresh rainbow trout – cook in bag with herb butter
Selection of Mediterranean vegetables to bake e.g.
6 large tomatoes – cut in 4
1 courgette - sliced
1 aubergine – diced
1 carrot – sliced
25 g Olives – pitted
Sea salt and pepper
Basil leaves – chopped
Pre-heat oven to 180C (fan)
Put chopped vegetables onto a baking tray and toss in olive oil.
Season with sea salt and pepper.
Put vegetables on the bottom rack of oven with the rainbow trout on top rack.
Cook for 20mins and check if done.
Divide vegetables between to plates and put fish on top.
Sprinkle with basil leaves.
Put lemon wedges on the side with a fresh green salad.
