Green Pea Soup

Serves 4-6

500g peas with shells (frozen peas will work as well.)
1 small lettuce - chopped
1 sprig parsley
1 sprig mint
1 small leek - chopped
4 cups water
1 cup milk
1 cup cream
Sea salt
Black pepper
1tsp bicarbonate of soda
1tsp sugar
 
Method
Shell the peas and put them into a saucepan of boiling water with their shells, 
Bicarbonate of soda and the other vegetables.
Simmer for about 20mins. Take out a few peas for decoration.
Using a hand blender, blend until smooth.    
Bring to the boil again and add sugar, milk and season with salt and pepper. 
Finally add cream but do not boil.
 
Garnish with peas and serve with crusty bread.
