Homemade Tomato Sauce

1lb tomatoes - sliced
2oz lean ham – finely chopped (leave out if vegetarian)
2 shallots – finely chopped
1 bay leaf
1 sprig thyme
10 peppercorns
1tbsp butter
1tbsp plain flour
1tbsp white whit vinegar
Sea salt
Black pepper
 
Method
Melt the butter in a saucepan add the ham and shallots.
Cook gently without browning.
Add seasoning, herbs, peppercorns, tomatoes and
sprinkle over the flour and stir together.
Boil gently for about 20mins or until reduced.
Hand-blend until smooth.
Use as required.
Can be put into a sterilised bottle and
keep in the refrigerator until needed.
 
Can be used for risottos, pizza, pasta etc.
