Peppered Sardines with Sun-Blushed Tomatoes

Serves 2

2 Fresh Sardines
1 lemon
A sprinkle of Sea salt
A sprinkle of Pepper
A sprinkle of Cayenne Pepper
A sprinkle of Dried Oregano
Handful/A sprinkle of Fresh or dried Thyme
A sprinkle of Crushed Chilli flakes
1 garlic clove - finely chopped
2 or 3 Sun-blushed tomatoes - chopped
Mixed salad greens

Method

Pre-heat oven to 190C (Fan) 
Place the sardines on a baking sheet lined with grease proof paper. 
Bake in the oven for 20mins or until the flesh is white 
and fakes when touched by a knife. 
Place the sardines on a plate and squeeze over lemon juice. 
Season with salt, pepper, cayenne pepper, oregano and thyme. 
Scatter over garlic and tomatoes.

Serve with salad and crusty bread.
