Potato Fried Egg and Prosciutto                 

Serves 2

2 potatoes – cooked, left to become cold and sliced
1tbsp Butter
1tbsp olive oil
4 pieces prosciutto
2 eggs
Sea salt
Black pepper
Bread - to toast
Pre-heat oil and butter in non-stick fry pan.
Place the potato pieces in the pan and fry on
both sides until golden brown.
Season to taste with salt and pepper.
Garnish with parsley sprig. 
Serve plated with toasted bread on the side.
